Samosa in the tandoor


The classic recipe of preparation of the traditional Uzbek dish in the tandoor. It serves as main course and as snack.


For dough:

  • 1.5 drinking bowls of flour
  • 1 teaspoon of salt
  • ½ drinking bowls of water

For forcemeat:

  • 400 g of mutton or beef fillet
  • 1-2 onion bulbs
  • 2 tea spoons of salt
  • 50 g of fat tail fat
  • sprinkling black pepper – to taste

Preparation process

Knead unfermented dough. Let it stand for 15-20 minutes.
Divide dough into 40-42 g pieces and swirl them into flat cakes. Stack in the middle of flat cake forcemeat and pieces of fat tail fat.
Shape the dough in an envelope form. Sprinkle the basis with water and pitch it on hot walls of the tandoor. Sprinkle samosa with cold water, close the tandoor cover for 20-25 minutes.
Grease prepared samosa with fat and serve on the table.
